Cilantro Lime Chicken Tacos

Easy, delicious tacos with juicy marinated cilantro lime chicken that is cooked to perfection on a skillet. Top the tacos with fire-roasted corn, red onion, tomatoes & cotija cheese for flavorful tacos that will be on the table in less than 30 minutes!

  • 1 lb chicken tenders or substitute with thighs or breast
  • 2 juiced limes
  • 4 large minced garlic cloves
  • 1 tbsp Lemon Pepper Seasoning
  • 1/2 cup chopped cilantro
  • 1/2 cup avocado oil
  • tortillas
  • 1 pint diced baby tomatoes
  • 1/2 diced red onion
  • 1 cup fire-roasted corn cooked from frozen


  • In a shallow dish, whisk together: juice of 2 limes, 4 minced garlic cloves, 1 tbsp lemon pepper seasoning, 1/2 cup chopped cilantro & 1/2 cup avocado oil.
  • Add the chicken and allow to marinate in the fridge for 4-12 hours.
  • Heat a large skillet over medium heat and add a few tbsp of avocado oil. Remove the chicken from the marinade and pan sear until golden brown and crispy on each side, about 4-5 mins per side. (Optional: grill the chicken)
  • Prep the rest of the ingredients by warming the tortillas on the stove and cooking the frozen corn.
  • Chop the chicken and assemble the tacos!
