Asian Turkey Lettuce Wraps

Ground turkey, red onion & peas are sautéed with an Asian-inspired sauce before being served in butter lettuce wraps for a delicious, healthy meal.

Ingredients
  

  • 1 tbsp avocado oil or olive oil
  • 1 lb ground turkey can sub ground chicken or pork
  • 1/2 red onion, diced
  • 1 cup frozen peas
  • salt & pepper, to taste
  • 1 head butter or romaine lettuce

For the Sauce:

  • 1/4 cup coconut aminos, tamari or soy sauce
  • 1/2 cup chicken or vegetable broth
  • 1 tbsp rice vinegar
  • 1 tbsp fish sauce
  • 2 tsp sesame oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tbsp arrowroot or cornstarch
  • 1/4 tsp red pepper flakes optional- omit for no heat

Instructions
 

  • Wash & dry all lettuce leaves to remove any dirt.
  • Heat a medium skillet over medium heat, add oil.
  • Brown the ground turkey in the pan, adding the red onion & frozen peas at the end of cooking time.
  • Whisk together all ingredients for the sauce, add to the skillet and let thicken for a few minutes over medium-low heat.
  • Serve filling in lettuce wraps.
  • Optional: add white or brown rice to the wraps. Top with cilantro and lime juice.
