Perfect Roasted Potatoes
Fingerling potatoes are coated in seasonings and oil before being roasted to perfection with a crispy, crunchy exterior and a soft inside for perfect roasted potatoes every single time
- 1 lb fingerling potatoes
- 1 tsp salt
- 1 tbsp seasoning blend Italian, Garlic 'n Herb, Oregano
- 1/2 tsp black pepper
- 1/4 cup extra virgin olive or avocado oil
Preheat oven to 425 degrees.
Line a baking sheet with parchment paper.
Slice fingerling potatoes in half, lengthwise.
In a large bowl, combine sliced fingerling potatoes, oil and seasonings. Stir to coat well.
Distribute potatoes on the baking sheet, being sure to not overcrowd. Place the potatoes cut-side down.
Roast the potatoes for 25 minutes, check by flipping a few over, and continue roasting until they reach desired doneness (about 30-35 minutes).
