Perfect Roasted Potatoes

Fingerling potatoes are coated in seasonings and oil before being roasted to perfection with a crispy, crunchy exterior and a soft inside for perfect roasted potatoes every single time

  • 1 lb fingerling potatoes
  • 1 tsp salt
  • 1 tbsp seasoning blend Italian, Garlic 'n Herb, Oregano
  • 1/2 tsp black pepper
  • 1/4 cup extra virgin olive or avocado oil


  • Preheat oven to 425 degrees.
  • Line a baking sheet with parchment paper.
  • Slice fingerling potatoes in half, lengthwise.
  • In a large bowl, combine sliced fingerling potatoes, oil and seasonings. Stir to coat well.
  • Distribute potatoes on the baking sheet, being sure to not overcrowd. Place the potatoes cut-side down.
  • Roast the potatoes for 25 minutes, check by flipping a few over, and continue roasting until they reach desired doneness (about 30-35 minutes).
